Instead, harvesters of olive wood look for trees that are not bearing fruit but instead are marked with consistent burl – a rounded knotty growth on a tree, giving an attractive figure when polished and used especially for handcrafted objects and veneers.

Although its been around for centuries, olive wood has been gaining popularity in the kitchen over the past few years.
