    Mmm, Cheese! DIY Gourmet Cheese Crisps

    Gourmet Cheese CrispsI came across this recipe recently and thought it was pretty genius. There’s nothing like being able to create that upscale restaurant experience in the comfort of your own kitchen. The writer suggests using Parmesan, Cheddar, or Manchego to create these cheese crisps you might find atop a Caesar salad or soup appetizer. I’d also definitely try it with Asiago for that unmistakable zesty flavor.     Cheese Crisps
    Yield: 8 or 9 crisps
    Time: 15 minutes
    ½ cup grated Parmesan, Cheddar, or Manchego cheese (about 2 ounces)
    Heat the oven to 350°F, and line a baking sheet with parchment paper. Form about 1 tablespoon of the cheese into a thin circle on the parchment paper; repeat with the remaining cheese, leaving 2 inches between circles. Bake until the cheese is golden brown and lacy, 5 to 10 minutes. Cool on the baking sheet, then serve.

    Meet the Designer: Deirdre Kelly

    Deirdre Kelly and her artwork are the focus of our second feature in the “Meet the Designer” series. Deirdre serves as GiftTree’s head designer, developing our high-end wine and gourmet baskets, themed gifts, and signature standalone items. Of her many innovative contributions, perhaps the most impressive is her set of original art prints seen in the Woodland Animals Personalized Wall Art and Jungle Animals Personalized Wooden Wall Art.

    Enjoy the interview below for a unique insight into Deirdre’s favorite gifts, her thoughts on creativity and meaning, and what inspires her to create such elegant gifts.

    Tell us a bit about your background as a designer.

    I earned my degree in Graphic Design from Oregon State University. I’ve had an interesting range of design projects, from designing trade show booths and retail shop windows, to designing and casting jewelry and illustrating children’s books. I enjoy being inspired by all forms of art and I’ve spent years designing custom murals and decorative painting techniques for private and commercial establishments.

    Where do you get your inspiration?

    I find inspiration everywhere: the way the sun light hits a leaf, or the sleek lines of a metal surface. Anything can spark the imagination. That’s what makes art ever-changing and fun.

    When did you become interested in design?

    Art has always been my passion; I can’t remember when design wasn’t a part of my life in some way.

    What is your proudest accomplishment as a designer?

    I remember the first time I saw a logo that I had designed on a Mattel Hot Wheels box. That was exciting for me. But the best feeling was when my client said, “It’s so much more than I could have imagined and better than I even dreamed.” Words like that fuel the soul.

    Can you describe your style in just a few words?

    My style changes, but for the most part, I would describe my style as simple elegance and modern.

    What are your two favorite gift basket designs we have at GiftTree?

    If you had the freedom to design anything, anywhere, what would it be?

    If I had the freedom to design anything anywhere, I’d travel the world to see what inspires me.

    What materials do you like to use the most and why?

    I love to work with many different mediums, but when I’m having a rough day, breaking out the acrylics always brings out the creativity and puts things into perspective.

    What’s your favorite thing to do on the weekend?

    Spending time with family and friends, taking a long hike in the beautiful (and sometimes not so beautiful!) weather, and collaborating on my book. These things make for a perfect weekend.

    What is your dream job?

    My dream job would allow me to live well, doing what I love.

    What is one personal belonging you just couldn’t live without?

    My dad’s ring. He was my biggest champion and always believed in my talent as an artist. He passed away when I was 15 and I wear his ring every day. It helps me to remember that the little things in life have great importance, and that life is too short; strive to always be the best that you can be.

    Finally, what is the best part of working for GiftTree?

    Knowing that something that I created is bringing joy to someone.

    Easter is always an exciting time of the year for the kids. A day packed full of Easter egg hunts, chocolate bunnies and time spent relaxing with the family always made it one of my favorite holidays of the year. As we near this year’s celebration I always like to reflect on the fun times I had with my family.

    Nothing seemed better than waking up early knowing the Easter bunny had left a treasure trove of sweets laying around the house and yard. My brother and I would scavenge for our plunder of chocolates and jelly beans that the Easter bunny always lovingly left behind before opening up our special gifts from our parents. After a quick Easter service and playing around the neighborhood fueled by our overload of sugar, we always settled down to a nice dinner. The holiday remains one that is dear to my heart when thinking back on my childhood.

    Meet the Designer: Zhanna Hamadeh

    Zhanna Hamadeh is GiftTree’s illustrious Design Team Manager. She pioneers new product designs, keeps the “trains running on time” with developing products, and sets the overall atmosphere for the Design Team. We sat down with Zhanna recently to gain perspective on her background, what inspires her, and her favorite GiftTree gifts. Here’s a behind-the-scenes look at the talented people who make the GiftTree magic happen.

    Tell us a bit about your background as a designer.

    I studied design at the Art Institute of Portland and went on to getting a BFA in Fine Arts at the Portland State University, I have worked in various design related fields, from commercial and residential interior design, set design for major publications, to window display design at Anthropologie, Nordstrom, and Saks.

    Where do you get your inspiration?

    I’m pretty eclectic when it comes to my inspiration. A vintage item with an interesting shape can spark a new idea – becoming a catalyst to an entire product line. I enjoy Museums and galleries, and of course…Pinterest!

    When did you become interested in design?

    I’ve always naturally been attracted to the arts, I remember when I was 8, I painted my entire room black-which was a very odd choice for a young girl. Thankfully, my parents have always supported me and allowed me to be creative form a very young age.

    What is your proudest accomplishment as a designer?

    Anytime a client tells me that I have captured “them” in my design work- I’m elated.

    Can you describe your style in just a few words?

    My style is Understated Elegance, with Industrial and Rustic touches.

    What are your two favorite gift basket designs we have at GiftTree?

    What materials do you like to use the most and why?

    I enjoy combining unexpected elements and making them work. The juxtaposition between different materials- glass and concrete, metal and leather, provides a visual balance of rough and clean, hard and soft textures – making a design more intriguing.

    What’s your favorite thing to do on the weekend?

    Spending time with my family, hosting a Sunday brunch, and a visit to a gallery opening sums up to a perfect weekend for me.

    What is your dream job?

    I don’t have a “dream” job – per se, but because I enjoy design and art in and of itself. Anything related to keeps me happy & inspired.

    One personal belonging you just couldn’t live without?

    There are so many things that come to mind, but if I had to choose one, it would be an old violin I have brought to the US from Russia 20 years ago.

    Finally, what is the best part of working for GiftTree?

    The best part of working for GiftTree is that I get to play a small part in every gift our customers receive.

    10 Ideas for a Meaningful Sympathy Card Message

    The words of sympathy you choose for a funeral gift can transform it from a simple gesture into something that really resonates for a long time. Showing your support with words only, from far away, is not easy. But it can make a big difference especially if you’re not there physically.

    Keep in mind that it’s important to show empathy as well as sympathy. Sayings like “I know what you’re going through” and “I understand your pain” don’t mean a lot unless you really do know, and may get met with a quick “no you don’t.” The most important thing during this time is to show that you are with them on the long journey of grieving.

    So try to set aside fears that you won’t get it “right” and just craft a simple, personal message. It’s definitely important to say something rather than nothing so the person knows they’re not alone. Here are ten ideas that may help.

    My Favorite Artisanal Cheeses

    OK, OK, I’m a cheese snob. I admit it. But at the very least I’m good about sharing my love of cheese with anyone who’s interested.

    Have a look at yesterday’s post about assorted cheese gift baskets and cheese-related gifts as well.

    One of my favorite places in America is Pike Place Market in Seattle. I’m sure there are other awesome and legitimately interesting places in Seattle (I’ve at least enjoyed SafeCo Field), but this area is the tourist trap and it does trap me every time. I love the Market Spice tea shop, the endless menagerie of bright fruits, veggies, and fresh fish, and the original Starbucks.

    Just down the walk from Starbucks is Beecher’s. When you walk in, you see their huge gleaming stainless steel vats of milk, whey, and curds being made, and you can always get a sample of whatever fresh cheese curds they’re producing that day. The best “Seattle experience” I know as far as food is a Beecher’s Smoked Flagship Grilled Cheese with their soup of the day (it’s always incredible). Then you go and sit under the awning on the pier overlooking the sound, listen to buskers, and watch the passersby, or you just stroll the rest of the Pike Place shops while you enjoy such an exquisite sandwich. The rich, smoky, lightly salted cheese on buttery, savory artisan bread tastes even better in the rain.

    Almost a year ago I decided to try a dairy-free diet to see what the benefits would be. After living in Rwanda I knew that I had developed a pretty sensitive GI tract and wanted to see if dairy was part of the culprit. So that meant that I actually had to give up my favorite cheeses, milk, potato soup, etc.

    Having to totally avoid cheese was a bummer for a while, until I discovered the wonders of Spanish Manchego. Made from sheep’s milk and 100% lactose free, Manchego is a hard cheese, with a texture more similar to a fresh Parmesan or Romano, but with a mild, buttery, and tangy flavor profile. The more it ages, the better it is – I recommend six months minimum. It makes an incredible quesadilla, a grilled cheese that definitely competes with Beecher’s, and it will liven up baked potatoes or Irish Sundaes. It also appears commonly as an hors d’oeuvre with rice crackers and quince paste (incredible), or with bruschetta tapas.

    I have to admit that I wouldn’t know about these next two if not for GiftTree. That said, there’s nothing like a job that helps you discover amazing foods! Barely Buzzed is hands-down the most interesting and memorable cheese I have ever tasted. While Manchego and Beecher’s are excellent “workhorse” cheeses to always keep around the house for a quick lunch or to serve with dinner, Barely Buzzed stands alone, perfect for cocktail soirees or upscale hors d’oeuvres.

    It starts with a smooth, creamy white cheese similar to Provolone, but sweeter, and is then infused with lavender oil, and rubbed with espresso grounds.

    That’s right: a creamy gourmet white cheese with a lavender and espresso infusion. What you get on the palette is like culinary fireworks: so much “color” and depth, and a lasting intensity. After the aging process, it ends up with a nutty, toasted caramel flavor with huge, surprising bursts of coffee and a whisper of lavender laced in throughout. For everyone I’ve shared the Barely Buzzed with, the response is immediately “Wow!” or “Whoa, what is that??” It’s so unique, and wonderful. The signature version comes from Beehive Cheese Company, and Trader Joe’s also has a version.

    This is my other splurge even though I’m technically avoiding dairy these days. When we lived in Rwanda, the only cheese that was produced locally was traditional Gouda. You could get a whole wheel of it for the equivalent of $5, and it was what we used on pizza, sandwiches, pasta, everything. Yes, we got tired of it, but the only other option was to go to the one import store and buy mozzarella for $15 a pound. So we learned to appreciate Rwandan Gouda. It was all we had.

    Now that we’re back in the States, we have all the food choices in front of us that we missed for 4 years. So we don’t go for Gouda that much anymore, but when a recipe calls for it or we just get a craving, we go for the Dutch Beemster Vlaskaas. I think its main appeal is that it’s only on the second or third layer of flavor that you realize it’s Gouda. At first nibble it tastes like white cheddar, then goes quite a bit more creamy and sweet, before rounding out the palette with deep, pungent Gouda flavor. The Beemster Gouda is also lactose free, though it contains cow’s milk instead of sheep’s and I haven’t seen the same GI benefits as with Manchego. But I still I find that it’s worth it to “cheat” with this one, just because the complexity and duration of flavor is so enjoyable.

    I could go on, but these are the four cheeses I would take with my anywhere in the world.

    March is National Peanut Month (Really!)

    There are all kinds of interesting and quirky holidays every month that rarely get attention (mainly because they’re quirky?) I suppose the amount of attention we give them makes them more interesting. For example, according to Foodimentary.com, March 24 is known as “National Cake Pop Day” and the 31st is “National Clam on the Half-Shell Day.” I’m not sure how well GiftTree could do clams in a gift basket, but I’m sure one of our top-notch designers could get us in on the cake pop craze. Oh wait – we’re already doing that.  Of course we are!

    But it is true that March is National Peanut Month, and the National Peanut Board (yes, it’s a thing) actually has a pretty decent-looking website. A compilation of interesting facts from their site:

    – The average American consumes more than six pounds of peanuts and peanut butter every year.
    – Peanuts account for 2/3 of all snack nuts consumed in the USA.
    – Four types of peanuts are grown in the US – Runner, Virginia, Spanish, and Valencia.
    – Four of the top ten candy bars in the US include peanuts or peanuts.
    – Peanuts possess more protein than any nut.
    – Peanuts are a nutrient-rich superfood with 30 essential vitamins and minerals
    – Like all nuts, peanuts are a plant-based source of protein and healthy fats, and have more antioxidants than broccoli, carrots, or green tea.

    I used to live in East Africa, where peanuts are known as groundnuts or g-nuts (fitting, given they way they grow) and are popularly thought to be an aphrodisiac, especially in Kenya. The meal I miss most from our time living in Rwanda is Ugandan Luwombo Peanut Sauce. We used to eat lunch at a place where they would truck in fresh banana leaves every week and use the leaves to steam the curry-style peanut sauce with onions, savory spices, and oils. They would bring it to the table still wrapped in the steamed leaves, with chapatti flatbread, matoke plantain, and veggies and rice. It comes out looking like this:

    You would then either dip your chapatti directly into the sauce (only foreigners use their hands) or spoon it out onto your rice, veggies, matoke, etc. Unfortunately the recipe is traditional and secretive, but its thick gravy-like consistency and smoky aroma make for one of the best soul foods I’ve ever had. My mouth is watering right now just looking at that picture and recalling fond memories.

    Easter Gifts for Her

    In the first part of this two-part series I wrote about finding a way to dote upon Dads for Easter and keeping us Dads included in all the festivities of Easter Sunday instead of in the mundane background where we usually end up.
