Caviar is the roe or eggs of a large fish, typically sturgeon, though there are many varieties.     A high protein delicacy, caviar is best served chilled on a bed of ice with crackers, toast points, chilled vodka, or the time-tested favorite of champagne. When serving, be sure to use a wood, gold, or mother-of-pearl spoon and not steel or silver as metals can dramatically alter the taste of caviar.
